I came across these recipes in "edible Grande Traverse" and Mackinac Journal. Both called for a food processor but due to space and power restraints I don't have one available. Sooooo----- If someone would try them and tell me how they turn out ---- I will try and make them the old fashioned way with a whip and muscle power.
Herbed Mayonnaise
3/4 cup Mayonnaise
1/2 lemon, juiced
a few drops of hot sauce
1 garlic clove, crushed
2 tb thyme leaves
2 tb flat-leaf parsley leaves
2 tb chopped chives
combine all ingredients i a food processor and pulse
yield 4 servings
Homemade Mayonnaise
1 large egg
1 large egg yolk
2 tsp Dijon mustard
2 tsp white wine vinegar
1 tsp salt ( more if needed to taste)
1 1/2 cup soy oil, vegetable oil or grapeseed oil
1/4 tsp freshly ground black pepper ( again to taste
2 tsp lemon juice ( can substitute more vinegar)
Place the egg, egg yolk and mustard in a work bowl of a small food processor
process for 30 seconds and them with the machine running add the vinegar and salt and process for another 15 seconds.
With the machine still running begin to add the oil SLOWLY a few drops at a time
When the mixture starts to thicken add the reminder of the oil in a slow, steady stream until it has been Incorporated.
Stop the machine
add the pepper and lemon juice and pulse just enough to combine
taste
adjust seasons as needed.
The restaurant that we ate in made their own mayonnaise and I would like to give it a try if these work.
